Ingredients
- 2 bone-in pork chops
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
- 4 tablespoons unsalted butter, divided
- 5 medium baby Bella mushrooms, sliced
- 3 garlic cloves, minced
- ¼ cup water or chicken stock
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon smoked paprika
Instructions
Heat the Skillet: In a cast-iron skillet, warm the olive oil over medium heat.
Season the Pork Chops: Sprinkle salt and pepper on both sides of the pork chops.
Sear the Pork Chops: Place the pork chops in the skillet, searing each side for about 3-4 minutes until golden brown. Check that the internal temperature reaches at least 145°F. Transfer the pork chops to a plate and set aside.
Make the Garlic Mushroom Sauce: Add 2 tablespoons of butter to the skillet and allow it to melt. Stir in the garlic and mushrooms, seasoning them with salt, pepper, and smoked paprika. Sauté, stirring frequently. Pour in the chicken stock, using a wooden spoon to scrape up any browned bits from the bottom of the skillet.
Finish the Dish: Add the remaining 2 tablespoons of butter to the skillet and let it melt. Return the pork chops to the skillet and allow everything to simmer for 2-3 minutes to absorb flavors.
