- 2 tablespoons unsalted butter, divided
- 3 cloves garlic, minced
- 1 shallot, finely chopped
- ½ lemon, juiced
- 1 tablespoon lemon zest
- ½ cup chicken stock
- ⅓ cup heavy cream
- Fresh parsley, for garnish
Instructions
Prepare the Chicken: Slice each chicken breast in half lengthwise. Season both sides of the chicken with salt and pepper, then dredge lightly in flour.
Cook the Chicken: In a skillet, heat 1 tablespoon of olive oil with 1 tablespoon of butter. Sear the chicken until golden brown, cooking about 4–5 minutes per side, or until the internal temperature reaches 165°F. Transfer the chicken to a plate and set aside.
Make the Sauce: To the same skillet, add the remaining olive oil. Sauté the garlic and shallot until soft and fragrant. Stir in the lemon zest, lemon juice, and chicken stock, scraping any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
Finish the Dish: Pour in the heavy cream, stirring well, then return the chicken to the pan. Allow everything to heat through, then turn off the heat. Add the remaining tablespoon of butter and let it melt into the sauce. Garnish with fresh parsley before serving.
