Chipotle Salsa Recipe

Ingredients
- 1 can (15 ounces) diced fire-roasted tomatoes, drained (keep some liquid)
- 1 clove garlic, roughly chopped
- ½ cup roughly chopped white onion (about ½ small onion)
- ¼ cup loosely packed fresh cilantro leaves
- ½ medium jalapeño, seeded and roughly chopped
- 1 to 3 chipotle peppers in adobo sauce (adjust to taste)
- 1 tablespoon fresh lime juice (more if desired)
- ½ teaspoon salt, or to taste
Instructions
Prepare Ingredients:
- Drain about half of the liquid from the can of tomatoes and set aside the rest.
- In a food processor, pulse the garlic until finely chopped.
Combine and Blend:
- Add tomatoes with the remaining juice, onion, cilantro, jalapeño, 1 chipotle pepper, lime juice, and salt to the food processor.
- Blend until the salsa is mostly smooth, with no large chunks of tomato or onion left. Taste and add extra chipotle peppers for more heat, or adjust lime juice and salt to your preference.
Serve or Store:
- Enjoy the salsa immediately or store it covered in the refrigerator for up to 10 days.
Notes
- Tomato Selection: Fire-roasted tomatoes, such as Muir Glen brand, bring a richer flavor, though regular diced tomatoes also work.
