Easy Chocolate Chia Seed Pudding
A simple, wholesome chocolate chia seed pudding with just six ingredients! Naturally sweetened and ultra-creamy. Perfect as a nutritious breakfast, snack, or treat!
Ingredients
- 1/4 cup unsweetened cocoa powder or cacao powder
- 3-5 Tbsp pure maple syrup (adjust to taste)
- 1/2 tsp vanilla extract
- 1/2 tsp ground cinnamon (optional)
- 1 pinch of sea salt
- 1 1/2 cups almond milk (or coconut milk for extra creaminess)
- 1/2 cup chia seeds
Instructions
- In a mixing bowl, combine the cocoa powder, maple syrup, vanilla, cinnamon, and sea salt. Stir to mix well.
- Add a little almond milk at a time, stirring until a paste forms. Then, gradually add the remaining almond milk, whisking until smooth.
- Add the chia seeds and stir thoroughly to combine.
- Cover the bowl and refrigerate for at least 3 hours, or overnight, until it thickens to a pudding consistency. For the best texture, stir again after 30–45 minutes in the fridge.
- Serve chilled with your favorite toppings, such as fresh fruit, granola, or coconut whipped cream.
Storage
Keep covered in the refrigerator for up to 4–5 days. Best enjoyed fresh!
